Pumpkin and Maize Porridge

Pumpkin/Butternut Maize Meal Porridge

Once you have this sweet and savoury porridge you will never have porrigde the same again

Ingredients
  

  • For the Porridge:
  • 500 ml water
  • 250 ml milk or plant-based milk
  • 150 g maize meal mealie-meal
  • 200 g cooked pumpkin or butternut squash mashed
  • 30 g butter plus extra for frying the egg
  • 5 ml 1 teaspoon ground cinnamon
  • 2.5 ml ½ teaspoon salt
  • 50 g brown sugar or to taste
  • For the Toppings:
  • 100 ml Lacto sour milk
  • 1 egg
  • 30 ml butter for frying the egg
  • Instructions:

  • In a medium saucepan, combine the water and milk. Bring to a simmer over medium heat.
  • Gradually whisk in the maize meal, ensuring there are no lumps.
  • Reduce the heat to low and cook, stirring continuously, for about 5-7 minutes, or until the porridge thickens.
  • Add the mashed pumpkin or butternut squash, butter, cinnamon, salt, and brown sugar. Stir well until everything is combined.
  • Continue to cook for another 2-3 minutes, stirring occasionally, until the porridge is smooth and creamy.
  • Fry the Egg:
  • In a separate small skillet, melt the 30ml of butter over medium heat.
  • Carefully crack the egg into the skillet.
  • Cook until the white is set and the edges are crispy, but the yolk is still soft (sunny-side up).
  • Assemble and Serve:
  • Pour the warm maize meal porridge into serving bowls.
  • Drizzle the Lacto (sour milk) over the porridge.
  • Carefully place the crispy fried egg on top of each bowl.
  • Serve immediately.
  • Tips and Variations:

Notes

For a richer flavor, use full-cream milk.
Adjust the amount of brown sugar to your preference.
If you don't have Lacto, you can use plain yogurt or buttermilk as a substitute.
Add a sprinkle of nutmeg or ginger to the porridge for extra warmth.
You can add raisins or chopped nuts to the porridge while cooking.
If you would like a sweeter egg, you can sprinkle a small amount of sugar on the egg while it is frying.
If you do not like a runny yolk, cook the egg longer.
If you do not have brown sugar, white sugar can be substituted.
